4 Classic Maine Lobster Recipes

Growing up in Maine, I had all kinds of delicious meals made of Maine Lobster. Now just a heads up, you can of course get these at restaurants, but its so much better making them at home. First off, the restaurants usually do not hvae the best quality lobster meat. The lobster meat was probably frozen in a salty brine full of preservatives. Second off, they are probably going to be cheap with the amount of lobster in the recipe. 

 

I personally will only eat Fresh Lobster, no preservatives and sodium, and I load my recipes up with lobster, so that every single bite contains a juicy sweet delicious taste of Maine Lobster! If you are like me, I would double the recommended lobster meat in the recipes below:

  1. Classic Lobster Roll -Ingredients: 2 cups cooked and chilled lobster meat, 1/2 cup mayonnaise, 2 tablespoons chopped celery, 2 teaspoons lemon juice, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 4 hot dog buns -Directions: In a medium bowl, mix together the lobster meat, mayonnaise, celery, lemon juice, salt, and pepper. Divide the mixture evenly among the hot dog buns. Serve immediately.
  2. Grilled Lobster Tails - I had to throw lobster tails in here. In Maine, we do not really eat lobster tails, but I know most of the country does, so I had to throw this in. Ingredients: 4 lobster tails, 4 tablespoons melted butter, 1 tablespoon lemon juice, 1 teaspoon garlic powder, 1/2 teaspoon salt, 1/4 teaspoon black pepper -Directions: Preheat your grill to medium-high heat. Cut the top of the lobster shells lengthwise down the middle, being careful not to cut all the way through the flesh. Brush the lobster tails with the melted butter, lemon juice, garlic powder, salt, and pepper. Place the lobster tails on the grill and cook for 8-10 minutes, until the shells are bright red and the flesh is opaque. Serve immediately.

  3. Lobster Bisque -Ingredients: 4 cups fish stock, 1 pound cooked lobster meat, 1 cup heavy cream, 1/2 cup dry white wine, 1/4 cup brandy, 2 tablespoons tomato paste, 2 cloves garlic, minced, 1 medium onion, chopped, 1 stalk celery, chopped, 2 tablespoons butter, 1 tablespoon olive oil, salt and pepper to taste -Directions: In a large pot, heat the butter and olive oil over medium heat. Add the onion, celery, and garlic and cook until the vegetables are soft, about 5 minutes. Add the lobster meat, fish stock, white wine, tomato paste, and brandy. Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes. Stir in the heavy cream and season with salt and pepper to taste. Serve hot.

  4. Lobster Mac and Cheese -Ingredients: 1 pound cooked lobster meat, 8 ounces elbow macaroni, 2 tablespoons butter, 2 tablespoons all-purpose flour, 1 cup milk, 1 cup shredded cheddar cheese, 1/2 cup breadcrumbs, 1/4 cup grated Parmesan cheese -Directions: Preheat your oven to 350°F. Cook the macaroni according to package instructions. In a large saucepan, melt the butter over medium heat. Add the flour and cook for 1-2 minutes, until the mixture is bubbly. Gradually add the milk, stirring constantly, until the mixture thickens. Remove the saucepan from the heat and stir in the cheddar cheese until it is melted. Add the cooked macaroni and lobster meat to the cheese sauce and mix well. Transfer the mixture to a 9x13-inch baking dish and top with the breadcrumbs and Parmesan cheese. Bake for 20-25 minutes, until the top is golden brown. Serve hot.
